Organic Ceylon (true) Cinnamon Sticks are nature at its best.

Organic Ceylon (True) Cinnamon sticks (or quills) are curled slices of cinnamon bark.  Ceylon cinnamon or cinnamomum zeylanicum is a very special spice with a rich, sweet taste that transports you to foreign places. It has a very high cinnamaldehyde content.  Ceylon cinnamon (or true cinnamon) is a purer form and has more potent properties.

This rich brown-orange bark has a characteristic aromatic taste and comes all the way from Sri Lanka where the cinnamon tree grows.

The inner bark is gently dried with warm air and it naturally curls into quills. Cinnamon is great if you are trying to cut down on sugar or honey as it has a sweetness which can replace your normal sugar fix – some people like to make a tea from cinnamon, clove and cumin.

Cinnamon sticks go really well in slow cook recipes such as tagines.  If you prefer powdered cinnamon try our organic ceylon cinnamon powder.

What’s special about ‘Ceylon’ cinnamon?

Not all cinnamon is created equal.  The more common cassia variety found in most supermarkets contains high levels of coumarin which can be toxic to the liver.  Ceylon cinnamon contains so little coumarin that it often doesn’t show up on testing.  Organic Ceylon is a higher grade product containing higher levels of cinnamon’s beneficial essential oil ( cinnamaldehyde).  It is safe to consume in large quantities on a regular basis, whereas cassia cinnamon is not due to its coumarin content.

Which Cinnamon is best for me?

If you are a cinnamon lover and want to use it regularly, then Organic Ceylon Cinnamon is the best choice for you.  If you use cinnamon a couple of times a year for a tagine then it might not matter so much in your case.  Personally we keep Ceylon Cinnamon on hand at all times for sweet and savoury dishes as well as a warming addition to herbal teas and mylks.  We feel much happier knowing the quality and safety of Ceylon.
