Organic Raw Cacao Nibs are often referred to as ‘food of the gods’. This power food used to be reserved for people of importance or those with spiritual duties. Cacao was given this status due to its rich taste and nutritional power, particularly theobromine. The beauty of these nibs is in their simplicity: raw and natural – they will make you re-think chocolate all together.
Our organic cacao nibs produced from the ancient criollo varieties and are grown in the Pasco, Huanuco, Ucayali and Junin regions of Peru. They are fermented at low temperatures and then dried gently in the sun. This careful processing means they never get warmer than 40°C. Regular cacao products are roasted at high temperatures but raw cacao is always processed with controlled fermentation and drying. Keeping the cacao at strictly low temperature preserves the enzymes and nutrients in the beans.
When you roast cacao beans they take on a distinctive roasted flavour which makes for great baking. If you prefer roasted cacao then try our organic natural cacao powder. Whether you choose raw or roasted, neither is alkalized and all our cacao products are organic, GMO free and bursting with flavour.
Cacao contains over 300 nutritional compounds and is particularly rich in plant polphenols. The most beneficial of these polyphenols are called flavonoids which have an antioxidant action.
Most regular chocolate choices have milk, sugar and other additives thrown in to preserve it, cacao powder is a perfect starting point to making your own.
These tasty nibs can be used in gourmet trail mix, sprinkled on porridge or used in raw desserts. If you want a raw cacao powder, simply put these nibs in a blender until you reach a smooth powder. Cacao is a source of selenium which contributes to normal function of the thyroid and immune system. They are high in a number of important nutrients including magnesium which is necessary for the reduction of tiredness and fatigue – a great excuse to make more cacao based foods!
