Honey crystallization is the formation and growth of sugar crystals in honey. Crystallization is a natural process and not a sign of adulteration or spoilage. Non raw honey is heated / pasteurised to prevent crystallisation however this increases HMF levels and kills the healthy enzymes that are usually present in raw honey.
